Awesome Octopus

1 lb. Octopus
2 tbl Sweet Paprika
6 Cloves Garlic (crushed)
6 Carrots (chopped)
6 Celery stalks (chopped)
1 Whole Red Onion (chopped)
1 Bottle of Cabernet Wine
1 tbl each Salt & Pepper
1 Lemon quartered

- Place the garlic, carrots, celery, onion, paprika, salt & pepper in the pressure cooker. Add 1 full bottle of Cabernet wine.
- Remove the head and beak (if intact) and place the Octopus on top of the vegetables. Add water until the Octopus is just covered.
- Set the pressure cooker to 20 minutes and start it up. After 20 minutes, release the steam and immediately remove Octopus and place in a pot with ice water to stop it from continuing to cook.
- Cut the legs to separate and grill for two minutes on each side.
The legs can be drizzled with olive oil and refrigerated for later.
Serve with lemon wedges.
