Pesto Pizzaz

- 2 cups Basil leaves
- 1/2 cup Pine nuts
- 3 medium garlic cloves
- 1/4 cup fresh lemon juice (juice from 1 whole lemon)
- 1/4 cup virgin olive oil
- 1 tsp each salt & pepper
The reason this recipe has "pizzaz" is the fresh lemon juice which really hits the citrus notes. Combined with the toasted pine nuts, this combo provides a unique flavor profile that I hope you'll enjoy.
- Toast the pine nuts in a pan without oil until golden brown.
- Combine the basil, toasted pine nuts, garlic, lemon juice and salt & pepper in a food processor and set to "chop".
- Pulse a few times and then begin adding your olive oil. Once you start adding the oil, move from pulsing to full chopping until fully combined.
